
In a cocktail shaker filled with ice, add 2 tsp. wild blueberries and 6 mint leaves, torn. Muddle mixture. Add 4-6 oz. lemonade. Shake and strain into a Collins glass filled with ice. Garnish with frozen wild blueberries.

In a cocktail shaker filled with ice, add:
1 oz chilled espresso
1 tbsp. chocolate syrup
Stir until well-chilled and strain into a Martini glass. Garnish with three roasted coffee beans.

2 tbsp mixed berries
1/4 oz fresh lime juice
1/4 oz simple syrup
2 oz white cranberry juice
1. In a cocktail shaker, add berries, lime juice and simple syrup. Muddle or mash† with a bar spoon.
2. Fill shaker with ice and add white cranberry juice. Shake sharply and strain into a rocks glass with ice.
3. Garnish with a mixed berry skewer.
Simple Syrup
Measure equal parts sugar and water in a small saucepan. Bring to a boil and cook 5 minutes, stirring to dissolve sugar. Let cool; refrigerate.
To Muddle or Mash
You'll need a muddler or bar spoon. Mashing the berries releases the juices into the cocktail giving it flavour.

Rim a Martini glass with lime cordial and red sugar. In a cocktail shaker filled with ice, add 1 oz. white grape juice, 1 oz. raspberry juice and 3 oz. orange juice. Shake and strain into the Martini glass.

To a blender, add 1 cup ice, 1/2 cup strawberries, 1/2 oz. grenadine and 3 oz. light cream. Blend until smooth and pour into a coupette glass. Garnish with a fresh strawberry.

Rim a tall glass with fresh lime and celery salt. Fill the glass with ice and add 2 tsp. spicy BBQ sauce, ¼ oz. lime juice and 4oz. Clamato. Stir to mix. Garnish with a beef pepperette.

In a cocktail shaker filled with ice, add 3 oz. pineapple juice, 2 oz. orange juice, 1 tsp. grenadine. Shake until frothy and strain into a highball glass filled with ice. Top with 2 oz. lemon-lime soda and garnish with a pineapple spear.

In a cocktail shaker filled with ice, combine 1 oz. passionfruit juice, 2 oz. pink grapefruit juice and 3 oz. cranberry juice. Stir to mix. Strain into a Martini glass and garnish with a pink grapefruit slice.

Fill a tall glass with ice. Add the juice of 1/8 fresh lemon, 3 oz. apricot juice, 2 oz. cranberry juice and 2 oz. ginger ale. Garnish with an apricot slice.

Fill a wine goblet with ice. Add 2 oz. cranberry juice and 4 oz. chilled apple cider. Stir to mix. Garnish with a cinnamon stick.
Airborne Mocktail

Fill a tall glass with ice. Add 3 oz. cranberry juice, 2 oz. orange juice and 1 oz. ginger ale. Garnish with an orange wheel.

Ingredients ( Makes 15 )
*Crushed ice
*900ml peach nectar
*1.2L soda water
Method
1.Place a scoop of ice in each glass, top with 60ml nectar and 80ml soda water.
Notes & tips
Serve in acrylic cocktail glasses.

*2 oz Sour mix
* 2 oz Fresh Lemon or Lime juice
*3 oz Carbonated lemon-lime soda
Dip rim of glass in lemon juice then in salt

In a cocktail shaker filled with ice, add 2 oz. apricot juice, 2 oz. orange juice, 1 tsp. grenadine and 1/4 oz. lime juice. Shake and strain into a Martini glass. Garnish with a fresh apricot slice.
